Hope it was a great one.


Had my virtual psychiatrist visit. She lit up when she saw me. Your office is so cool! Look at your plants! And quizzes me on the jungle behind me.

You look so much better in just a month (which is ironic since apparently both me and my brother woke up exhausted. We're both surrounded by flu so I think I have been exposed but my vaccine is kicking in) You look like you're doing better OFF your anti depressants than you were on. She let me choose what I wanted to do. See you no drugs in 2 months because in the year I've been on the meds my blood pressure has shot up. She knew that but hearing other symptoms she said you're getting an EKG and taking it to your pcp. Yep, fair, good idea. I'm a little worried honestly that the coughing stuff isn't a hiatal hernia but rather cardiac. I want to chase this shit down.

It's Ash Wednesday. It's been since forever since it mattered much. Years ago I gave up the idea of suffering to be more like Jesus. I have in the past did charity work and/or donation. And then I saw this. I see how much HATE this Pope gets not for some of the shit the church has pulled. No, because he keeps reminding Maga what Jesus actually said and he is pissing them off. I like this and while I can't promise to keep my mouth off some of the shit stuff MAGA does I CAN give up negative self talk and see if I can see my own self in a better light. If we can love ourselves, we do better in the world I think.

Check Please sticks and scones - had to find one for my favorite winter olympic sport. Okay that is NOT hockey but that's what the library had and the first book was cute.

19. Have you ever worn false eyelashes or had eyelash extensions?

Nope, never have. Never will. Boy, tonight is really boring. Not the night, just the questions aren't doing anything for me. It's just one of those nights. I decided I'm going to post a recipe I tried for dessert on hubby’s birthday. It was so good.

Recipe for Amish pineapple dump cake.

Pineapple dump cake

Gooey Amish Pineapple Dump Cake
Ingredients: 1 can (20 oz) crushed pineapple with juice; 1 box yellow cake mix; 1/2 cup unsalted butter, melted; 1 cup of b town sugar, optional whipped cream or vanilla ice cream for serving.
Instructions: Preheat oven to 350°F (180°C). Pour crushed pineapple with its juice evenly into a greased baking dish. Sprinkle the dry cake mix evenly over the pineapple without mixing. Drizzle melted butter evenly over the top, covering as much of the cake mix as possible. Top with a fine layer of brown sugar. Bake for 40–45 minutes until the top is golden and the edges are bubbly. Let cool slightly, then serve warm with whipped cream or ice cream if desired.

This one is so easy. And it's delicious. I don't even care for pineapple and I loved it.

Unstuffed cabbage rolls.


INGREDIENTS

2 lbs lean ground beef
1 large onion, diced
1 garlic clove, minced
1 small cabbage, chopped. (I use a large cabbage)
1 cup rice
2 (14 1/2 ounce) cans diced tomatoes
1 (8 ounce) cans tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

DIRECTIONS
In a large skillet or dutch oven, brown the ground beef and onions. Drain.
Add the garlic and cook an additional minute.
Add remaining ingredients.
Bring to a boil, cover, reduce the heat and simmer about 25 minutes or until the cabbage is tender.

Astute readers with excellent memory (or better than mine anyway XD) may remember when I lost my shit over Wind Breaker's volume 22 back in June. I basically immediately started writing this fic afterwards, which is just That Scene written from different point of views and every character individually losing it, just like I did... Lol. I'm a bit sick of trying to find an ending that is The Best Possible Ever so now that I have one that's probably good enough, let's go with it. Especially since that polyship doesn't have a ton of fic for it either, so it's nice to add one more either way.

On the plus side of going back to this story then dropping it again, the first chapters are decently edited already 😆

Things I'm Grateful For:

Gosh, this could take all night. 😂 I'll list the first thing I'm grateful for. That would be my father, a chef who taught me to cook and bake every Sunday night from when I was 11 until I was 18. He gave me his first cookbook when I got married and moved out of our home. I still have it, and still use it for many things. Once we got a house we had Sunday dinners at our place, unless we took the meal to my mom and dad's house and cooked it there. My folks were thrilled to have Sundays off. But I had to really learn to make smaller meals for us alone. On Sundays, I made dinner for 11 of us. That's what happens when you have six brothers and a sister, plus your parents.

18. What is your favourite shellfish dish (if you have one)?

I love almost all, but I love lobster and shrimp. I make this wonderful Alfredo sauce that I use for both of these delicious items. I like them cold, hot, diced into a casserole, and any other way anyone cooks it. And this leads me to ask if anyone has a favorite shrimp or lobster recipe. If you do, please share with me. Thank you.

What are you looking forward to this week?

I’m looking forward to having a day off. I’m helping a friend with her mom. Monday through Thursday from 11:30-1:30. So it’s just two hours a day. It’s not the end of the world but I get tired easily. That’s why it’s only two hours a day. And on Friday hubby and I are going out and celebrating. 56 years sounds like forever. And it has been. 😁🌹

Vaguely disheartened

I spent all night grading exams (so no time for fandom tuesday) That's not what disheartened me. I had six people get 100%. I had six get less than 50% but I feel more like that's on them. The majority of the class did well. We'll see if the ones who didn't do well come talk to me.

No what disheartened me was the young lady with the Charlie Kirk god bless t-shirt on. I do not engage in talking with students about politics (the closest I get is my stance on anti-science and vaccination which is not surprising given what I teach) never have not even before Ohio made it more or less illegal for me to challenge a student's beliefs.

But it DOES sadden me to see a group of people prop up someone who is/was actively hurting them. You want to scream do you realize Charlie Kirk would not want you in my class? That he said women's brains weren't good enough, smart enough to handle it. Women like me are a waste of space, that he advocated that given women the vote was the worst thing we did.

I want to ask what DO you get out of this. Please tell me.

sigh.


BUT!!!!! I do have good news! 13 people want my water aerobics class. Unless someone on the wellness committee votes it down it should be a go after spring break. I'm so happy. I'm debating going to yoga tomorrow (or again because it's very hard on me)

Notes:
This was a gift and part of several packets of different black teas of the same brand. This one in particular is darjeeling oolong tea. Based on the smell, I was expecting a smokier, bitter flavor, but was pleasantly surprised how smooth it was. I also like how the packet has a little caffeine rating on it. This one is rated for medium. It's a nice breakfast tea.

Notes:
This tea tastes good, but it's a confusing blend and I'm not sure I'd recommend it as a sleepy time tea. It's a blend of chamomile, hibiscus, peppermint, rose blossoms, spearmint, spice, & orange blossoms. While chamomile is restful, peppermint and spearmint are for waking you up. And there was also this weird disconnect of it smelled like a lovely, cinnamon forward, warm spiced tea, but then tasted like a mint blend with no hint of spice at all. Which it tasted good, it was just odd.

What’s something you wish others knew about you?

Most people know this but just in case I'll mention it tonight. I write children books. I have four published.

1. The Well-Mannered Giant. This one is a favorite of mine.
2. Ride, Rocky, Ride. Very cute one.
3. I Thought I Saw a Lion.
4. A Calf named Boo. My 2 year old great-granddaughter walks around the house carrying it and recites some of it as she walks. She's so cute. And that makes me feel so lucky.

I have six that I'm working on right now. They are going to be so dang cute. Has anyone else written children books? Mine usually rhyme. My grandkids always loved that part.
